Gluten-Free Egg-Free Soy-Free Corn-Free

Enjoy these light and fluffy biscuits!

Ingredients
Directions

    Preheat oven to 375°.

    Pour Baking & Pancake Mix into large mixing bowl. Cut in shortening with fork or pastry blender until mixture resembles coarse crumbs. Add milk, stirring with a fork. Do not let dough sit. Drop spoonfuls of dough onto a greased cookie sheet.

    Bake 12 minutes, or until brown on top.

I added 1 tsp of baking powder and used 1 tbsp of sour cream instead of milk. Nice and tender!

I used this recipe for drop biscuits on top of a chicken stew. I used buttermilk instead of regular milk. The stew was bubbling hot & I topped it with the biscuit batter & baked it for 12 minutes. It turned out great - seconds for everyone.

I substituted butter for shortening, full fat yogurt for milk, and added an egg and a pinch of salt. Cooked closer to 17 minutes. Easy to slice with a knife and delicious with butter, honey, and jam!

I didn't have shortening so used butter, and per the recommendation of other commenters I replaced the milk with full fat plain yogurt. Also added some salt and left them in the oven for more like 17 minutes. Easily sliced them with a knife and devoured them with butter, honey, and jam. Delicious.

I just bought Pamela’s baking mix and read through the comments on these drop biscuits. I used 2 cups of the mix, 1/2 c of mayonnaise, 2 Tblps of baking powder and 2/3 c milk. They turned out great! Moist, not dry or crumbly and a great flavor. The Mayo helped with that.

Based on other reviews, I added some sour cream. It was probably about 1/8 of a cup. My husband was very pleased with his biscuits and gravy! I had given up because usually GF biscuits aren't worth the effort. These are definitely "repeatable" as he likes to say. I"m not sure they would hold up to slathering jelly on them, but for biscuits and gravy we chop them up anyway.

So after reading the reviews, I attempted the biscuits myself with some recipe alterations. They turned out AMAZING!!! My boyfriend who isn’t gluten free loved them as well.
2 cups of Pamela’s Pancake mix
2/4 cup and a table spoon of butter
1/3 cup lactose free cream cheese (from almond milk)
2 eggs
They moist, buttery, and they were not super crumbly. They do flatten out a little but that’s why I basically doubled the recipe to make twice as many biscuits.
I used them for sausage, biscuits and gravy BUT I also ate it on top of my bowl of chili with some cheese. Both were delish! I’m so excited for such an easy and tasty biscuit recipe.

This recipe works for STOVE TOP SKILLET BISCUITS too! Add butter/ghee/bacon fat to a cast iron skillet. Cook 2-4 minutes, flip and cook the other side.Be sure to use a low heat, perfect for camping. I love to add fresh herbs to the mix, rosemary, thyme, even a little garlic. Delicious.

We use cold coconut oil rather than shortening and almond milk rather than dairy. The biscuits are deliciously both tender and crispy. Especially good with a hazelnut chocolate butter or spicy fig jam. No problems with rising at all. I wonder if some folks have old mix? They've always been delish for us!
