Do you test for gluten?
The new FDA regulation for standardizing gluten-free claims and labeling on products addresses a serious issue for many of our customers. At Pamela’s, we are pleased to see there are now some standards in place to help those with celiac disease and gluten intolerance make educated decisions regarding their food choices. We are happy to say that we provide gluten-free products already in compliance with new requirements and have been doing so for over 30 years. While the ruling requires gluten-free labeled products must test at 20ppm or less for gluten, Pamela’s products consistently test at 10ppm or less.

Are your products non-GMO?
Pamela's Whenever Bars, Traditional Chunky Chocolate Chunk Cookie, Traditional Dark Chocolate Chunk Cookie,  Paleo Flours, All-Purpose Artican Flour, Biscuit & Scone Mix, Chocolate Chunk Cookie Mix, Chocolate Cake Mix, Vanilla Cake Mix, Cornbread & Muffin Mix, Simple Bites Cookies, Holiday Cookies, Mac & Cheeses and Ramens are Non-GMO Project Verified. 

How do I read the expiration date?
Boxed Cookies, Graham Crackers & Bars – The date is located and printed on the bottom of the box. It reads Best By: Year, Month, Day, and Lot Code.
Example: 2021May14A5.

Figgies & Jammies – The date is located and printed on top of the package.
Example: 2022May15A6

Baking Mixes (in bags) – The date is printed on the back of the package, towards the top. It reads as month, day and year.
Example: Best By May 23 2020.

Grain- Free Pancake Mix (in box) – The date is printed on the bottom of the package, above the UPC. It reads as month, day and year.
Example: Best By May 23 2020.

 Pasta Meals – The date is printed on the bottom of the box, towards the right side. It reads as month, day and year: Best By NOV 16 2020.

Can I use Pamela’s products after their Best By date?
Unfortunately, we do not reccommend eating Pamela's products after the Best By date. 

Is the Baking & Pancake Mix dairy-free?
No, Pamela’s Baking & Pancake Mix contains cultured buttermilk. We have several non-dairy mixes that can be used for similar purposes as the Baking & Pancake Mix, such as Bread MixArtisan Flour Blend and several others. Are your products Kosher?
All of our products, except for our Pasta Meals, are all certified Kosher OU or Kosher Dairy OUD.

What does the “OUD” stand for on the cookies? Does the “D” in the OUD mark mean there is dairy in the cookies?
The “OU” part of the kosher mark on our cookies designates that these products, including the facility that they were produced in, are certified by Orthodox Union. Since butter (a dairy product) is in some of our products, the entire facility is designated as a “dairy” facility. Kosher law mandates that everything made on equipment that makes products containing dairy/milk will be designated with the “D”, even if there are no dairy/milk ingredients used in that product. This means that many of our non-dairy products will carry the “D” designation even though they contain no dairy ingredients.

Where does your Palm Oil come from?
Pamela’s Products uses palm oil sourced from Spectrum Organics. Spectrum chose to partner with DAABON Organic, a company committed to being stewards of their community and the planet.

DAABON’s farms are located in the northern Caribbean coast of Columbia on the western slopes of the Santa Marta mountain range. All are certified in accordance with international third party certifying agencies and have obtained social and environmental certification through such organization as S.A. 8000, Eco-Cert, Proforest and Bio Suisse. It’s clear that DAABON is proud of their role in creating a sustainable model for the palm industry.

One reason DAABON is able to make such a large impact on an entire industry is vertical integration. They are the only company in the world that has vertically integrated their palm production from seeder to farming, harvesting, mechanical pressing, physical refinery and finally to end products. By being directly involved in all stages of the process, DAABON is able to ensure not only the quality of their product, but the treatment of their employees and the land.

Which products are gluten-free & casein-free?

Why do you have “non-dairy” on the package, but the ingredients  states it may contain traces of dairy?
Our products that contain chocolate chunks are made with non-dairy ingredients, but the chunks themselves may contain traces of dairy proteins due to the manufacturing of the chocolate chunks

Why does it say that your chocolate chunks may contain milk protein?
Our non-dairy, dark chocolate chunks are produced on the same equipment as milk chocolate. We want people with a severe milk allergy to have this information. For a complete list of potential allergen ingredients we use please visit our “Allergy Information” page.

Why is there a nut warning on the baking mixes?
While some of our mixes contain nuts, every precaution is taken to ensure there is no cross contamination, including cleaning & sanitizing the blending equipment in between processing of each different item. There are no peanuts in the baking mix facility. Our allergen page will indicate if a product is nut free.

Is your xanthan gum derived from corn?
Our xanthan gum is grown on corn – it does not consume the corn.  Corn is simply the host vehicle.  All our products are corn free except our non-GMO Cornbread mix.

Why does the package say non-dairy if it has eggs in it?
The FDA recognizes dairy & eggs as two separate food items and two separate allergens. Dairy products are generally defined as food produced from milk and eggs do not fit this classification.

How much baking powder & baking soda is in the Baking & Pancake Mix?
Each cup of our Baking & Pancake Mix contains approximately 1 tsp of baking powder and 1/4 tsp of baking soda.

How many grams are in 1 cup of your flour?
The weights will vary by product. Here are the grams in 1 cup for each of the following products:

All-Purpose Flour Artisan Blend = 140 grams
Baking & Pancake Mix = 140 grams
Bread Mix = 150 grams
Chocolate Brownie Mix = 170 grams (without the chunks, which equals approx. 3 cups per 16 oz. bag)
Chocolate Cake = 183 grams
Chocolate Chunk Cookie Mix = 192 grams (without the chunks)
Pancake & Waffle Mix (Non-Dairy) = 140 grams
Pizza Mix = 160 grams
Vanilla Cake = 183 grams

Can I swap out the wheat flour for your Baking & Pancake mix in my favorite recipes?
Depending on what you are making, you should be able to take your favorite recipe and swap out the wheat flour for Baking & Pancake Mix, cup per cup. Please keep in mind that each cup of our Baking & Pancake mix contains approximately 1 tsp of Baking Powder and 1/4 tsp of Baking Soda, so you will want to make any necessary adjustments.  For questions regarding particular recipe please feel free to contact us.

Why didn’t my bread rise much? Why was my bread not cooked in the middle?
Our gluten free Bread Mix will produce a naturally moist, dense loaf of bread. You will most likely get approximately 3.5 inches of rise.  If oven baking, be sure to use an 8×4 pan, versus a 9×5, as the directions indicate.
If your bread is “gummy” in the center, eliminate 2 tablespoons of water. Try this each time you prepare the bread until you get it exactly where you like it.
If you are making egg-free or yeast-free bread, you will need to let the bread cool completely before slicing, or it will fall and create a gummy center.

Do you have recommendations for high altitude baking?
As we are basically at sea level, our high altitude directions are general and not recipe specific.  For high altitude you can try the following adjustments:
Decrease water by 1-2 tablespoons
Increase oven temperature by 25 degrees
Increase baking time by 5-15 minutes, checking at 5 minute intervals

What’s the difference between the Baking & Pancake Mix, the Bread Mix and the All-Purpose Flour Artisan Blend?
Each mix has been created to serve a distinct purpose. The Bread Mix is intended for more bread-like products, while the Baking & Pancake Mix is for fluffier baked goods. The All-Purpose Flour Artisan Blend can be used as a cup-for-cup replacement for regular flour in most recipes. How should I store the baking mix once I open the bag?
Store opened & unopened bags in an airtight container to help preserve the mix – simply plop the entire bag into the container, recipes and all. From there you can freeze it, store in the refrigerator or in a cool dry place.

How should I store my baked goods?
Wrap air tight and store on counter if using within a couple of days. For longer storage you can refrigerate or freeze.

Where can I purchase your products?
Pamela’s Products are available in most grocery stores, as well as health food and natural food stores, throughout North America. Is your baking mix packaging recyclable?
The baking mix bags are a recycle code 7. You can recycle the baking mix bags if you can find a facility in your area that accepts them. The material was chosen for its ability to protect our mixes for up to a year. Pamela’s concern is first and foremost for our customers to receive a quality product that performs as it should through the expiration date. Unfortunately, this limits the facilities that will accept this material. Until we are able to find a better solution that will protect our product for 12 months (as required by our distributors and retailers and is an added benefit to our customers) our customers will have to continue to inquire with their local facilities about recycling. We are sorry for the inconvenience.
