Pound Cake with Lemon or Vanilla

Gluten-Free Dairy-Free Soy-Free Nut-Free Peanut-Free

Classic pound cake – an easy and delicious dessert year round.

Ingredients
    • 1 bag Pamela's Vanilla Cake Mix
    • 4 eggs, large
    • 12 TBSP butter or Earth Balance (see note), softened (not melted)
    • 1/3 cup water
Directions

    Preheat oven to 350°.

    Lightly beat eggs. Cut butter into 12 pieces. Combine butter, eggs and water with Vanilla Cake mix and incorporate on low for 30 to 60 seconds. Lumps of butter in batter are normal -- do not continue mixing.

    Pour into lightly greased 9" by 5" loaf pan and bake for 60 to 65 minutes. Toothpick should come out clean.

    Note: If using Earth Balance in place of butter, baking time may be a few minutes less.

I followed the recipe exactly but found this very dry. The taste was good so warmed it in microwave followed by scoop of vanilla ice cream. Could applesauce be substituted for water to add more moisture?

I assume that if I want to add lemon flavoring (liquid) that I should take out an equal amount of water, right?

Can I use buttermilk in place of the water and if so, do I need to add any baking soda? How much?

    • Hi Ann, There shouldn't be a problem using buttermilk but it will be thicker than water so you might need to add a touch more to thin out the batter. There is leavening in the cake mix so you shouldn't need to add any baking soda.

Can I flavor this recipe with orange jello or should I use orange extract and depending on which one, how much. I'm trying to make an orange trifle dessert and would like the cake to be flavored rather than the pudding. Any suggestions would be greatly appreciated. I'm on a Dec. 23, 2015 deadline......Thank you.

    • Hi Cecelia, Our recipe uses the Vanilla Cake Mix which already has sugar in it. You might try our All-Purpose Flour Artisan Blend for that recipe as it is meant as a cup-for-cup wheat flour replacement. Good luck!

We LOVE the pound cake recipe! We pipe it into mini donut pans for gluten free "cake donuts"... they are outstanding. We have baked them multiple times and they always turn out perfect; golden brown outside, moist texture, and delicious flavor. We have decorated them with sprinkles to match classroom parties, dipped in chocolate for "string donut games", and even coated in powdered sugar (the mini donuts look just like the ones our kiddos have passed on aisles for years, no more frowns - THANK YOU!). Definitely a popular request in our gluten free home. Thank you Pamela's for another great mix, recipe, and happy childhood memory for our healthy son with Celiac!
