Original Pancakes

Gluten-Free Egg-Free Soy-Free Corn-Free

The original Pamela’s pancake recipe — still hands down the family favorite for breakfast! Made with Pamela’s Baking & Pancake Mix.

Ingredients

    Yield: six- 4 inch pancakes

Directions

    Preheat griddle over medium-low (350°F) and lightly oil. Mix all ingredients together until there are no lumps. Batter should be pourable, but not too thin. Add more water or mix as needed. Pour 1/4 cup batter onto griddle for each pancake. Cook until bubbles start to form and edges start to dull. Flip once. When cooked through, remove and serve immediately with fresh butter and real maple syrup.

    NOTE

    Extra pancakes can be cooked, cooled, wrapped in plastic, and frozen. To reheat, remove plastic. Wrap stack of pancakes in a paper towel and microwave until hot, about one minute, 15 to 20 seconds for one pancake.

    VARIATIONS

    Chocolate Chip Pancakes: Sprinkle mini chocolate chips on top of raw batter after you have poured it out onto the pan, but before you flip to cook the second side. Add a few more on top!

    Chocolate & Cinnamon Pancakes: Add mini chocolate chips and cinnamon to the batter and sprinkle a little extra on top.

    Chocolate & Orange Pancakes: Add mini chocolate chips and orange zest or juice to the batter.

    Blueberry Pancakes: Add blueberries on top of raw batter after you have poured it out onto the pan, but before you flip to cook the second side. Add a few more on top!

Love, love these pancakes! I use unsweetened almond milk instead of water and replace oil for applesauce, delicious! Thank you Pamela!!

I just used the baking and pancake mix this morning for pancakes. Adults and children alike loved it. I just added a little orange Zest into it for a little something special. The texture and flavor were both excellent. Sorry no pic, we devoured them before I could think of it. What’s left out there maybe

Just used the “same great product - new look” version and really didn’t like the new formulation - it was very pasty and the kids were not happy with the taste! So sorry but we won’t be purchasing your product again

We did not change our Baking & Pancake Mix formula. It is the same one we have been using since 1988!

    • EmilyW I agree with you. I also tried the "new" version and it was awful. Not sure why Pamela's is saying it is unchanged, but you can check the list of ingredients on the package and it is indeed different. I think the addition of the sorghum flour is the problem. That was not part of the original formula. I am still finding the original version at my local stores and that is the only one I will buy. That one is perfect...stick with it please, Pamela's!

      We have never put sorghum flour in the Baking & Pancake Mix and the formula is unchanged. If you could post a photo of the old and new ingredients, that might give us a better idea of which product you are talking about,

I have made these pancakes for years, following the recipe above and they never look as fluffy as those pictured. Any ideas on why mine stay flat? Thanks.

We tried the recipe but it seemed like they were not fully cooked in the middle. Is that how they are suppose to be? We were suppose to mix the oil in the batter right?

    • Hello Eduardo, Make sure that your griddle is hot enough. Yes, you mix all the ingredients together. This is our most popular product and recipe - please try again! The inside should be fluffy and cooked through.

Made the pam-cakes for the first time tonight for supper. Husband who is not GF loved them. I added blueberries to mine. Loved the flavor, as well. My problem however was that they stuck to my griddle horrible. It is an old electric one that is not non-stick, but I have melted coconut oil on it & used it successfully for pancakes for many years. I finally had to switch to a non-stick skillet and make them one at a time, which was quite tedious. I did put the oil in the batter. Any suggestions, as I would like to make them again and use the griddle.
