Gluten-Free Egg-Free Soy-Free Corn-Free

The original Pamela’s pancake recipe — still hands down the family favorite for breakfast! Made with Pamela’s Baking & Pancake Mix.

Ingredients

    Yield: six- 4 inch pancakes

Directions

    Preheat griddle over medium-low (350°F) and lightly oil. Mix all ingredients together until there are no lumps. Batter should be pourable, but not too thin. Add more water or mix as needed. Pour 1/4 cup batter onto griddle for each pancake. Cook until bubbles start to form and edges start to dull. Flip once. When cooked through, remove and serve immediately with fresh butter and real maple syrup.

    NOTE

    Extra pancakes can be cooked, cooled, wrapped in plastic, and frozen. To reheat, remove plastic. Wrap stack of pancakes in a paper towel and microwave until hot, about one minute, 15 to 20 seconds for one pancake.

    VARIATIONS

    Chocolate Chip Pancakes: Sprinkle mini chocolate chips on top of raw batter after you have poured it out onto the pan, but before you flip to cook the second side. Add a few more on top!

    Chocolate & Cinnamon Pancakes: Add mini chocolate chips and cinnamon to the batter and sprinkle a little extra on top.

    Chocolate & Orange Pancakes: Add mini chocolate chips and orange zest or juice to the batter.

    Blueberry Pancakes: Add blueberries on top of raw batter after you have poured it out onto the pan, but before you flip to cook the second side. Add a few more on top!

How can I make the pancakes with pumpkin? Should I just add pumpkin spice if so how much?

I stopped measuring and just put in the amount of mix I think I need, add the egg, use some of the oil, and then put in water until I get the correct consistency (i.e. thinner sometimes, or thicker when I add blueberries or bananas). I have given up on any other pancake mix and I am a pancake snub.

Love these pancakes. We omit the oil. Pancakes are awesome! Throw in some choc chips, bananas, blue berries or anything else. Yum

I love pancakes. So when I switched to a gluten free diet, I was mourning the loss of my favorite Saturday morning treat. Now, I use Pamela's Baking & Pancake Mix and am thrilled with the results. Even my husband likes them, and he's quite the pancake snob. Thank you, Pamela!

Hi, I add less water. The first time I made these the batter was so runny there was no way I could cook them. I added more mix but then had enough to feed 6 instead of 2. I now use half the water and check the consistency, if it needs more I put more in a little at a time. The egg size matters too.
I love Pamela's products and encouraged Swanson Health Products to carry this mix. Now I'm trying to get them to carry the 4lb one. This mix is a staple in our diets. Thank you.
