Original Pancakes

Gluten-Free Egg-Free Soy-Free Corn-Free

The original Pamela’s pancake recipe — still hands down the family favorite for breakfast! Made with Pamela’s Baking & Pancake Mix.

Ingredients

    Yield: six- 4 inch pancakes

Directions

    Preheat griddle over medium-low (350°F) and lightly oil. Mix all ingredients together until there are no lumps. Batter should be pourable, but not too thin. Add more water or mix as needed. Pour 1/4 cup batter onto griddle for each pancake. Cook until bubbles start to form and edges start to dull. Flip once. When cooked through, remove and serve immediately with fresh butter and real maple syrup.

    NOTE

    Extra pancakes can be cooked, cooled, wrapped in plastic, and frozen. To reheat, remove plastic. Wrap stack of pancakes in a paper towel and microwave until hot, about one minute, 15 to 20 seconds for one pancake.

    VARIATIONS

    Chocolate Chip Pancakes: Sprinkle mini chocolate chips on top of raw batter after you have poured it out onto the pan, but before you flip to cook the second side. Add a few more on top!

    Chocolate & Cinnamon Pancakes: Add mini chocolate chips and cinnamon to the batter and sprinkle a little extra on top.

    Chocolate & Orange Pancakes: Add mini chocolate chips and orange zest or juice to the batter.

    Blueberry Pancakes: Add blueberries on top of raw batter after you have poured it out onto the pan, but before you flip to cook the second side. Add a few more on top!

I made your pam-cakes and found them to be really good! However, in my efforts to assure there were no lumps I whisked the mixed batter. Though the pam-cakes were very tasty, they were thin. So, how do you get the lumps out without whisking and still ?
I want to do the waffles, but have the same concerns.

    • HI Bob - This recipe tends to make thinner pancakes. If you would like thicker pancakes add a little more mix until you reach your desired consistency. I hope this is helpful. Denise, Customer Service

Made the recipe as above, but pancakes were a little thin, and a little too savory for us. Made a second batch and substituted 1/2 cup lowfat buttermilk + 1/4 cup water for the water, and omitted the oil completely. Success! A much more satisfying pancake for us. We will add a tsp. of sugar the next time we make them.

I really do love using Pamela's Baking Mix for pancakes. I substitute 1/2 the water with milk and add vanilla. Unfortunately, I have found that I can not tolerate almonds and that is the main flour used in this mix. Oh, how I love the subtle crunch in these pancakes. Anyway, I HIGHLY recommend this baking mix for pancakes, muffins, and various desserts. Love it!

Hi there and thank you!
I got a sample of these from the Expo in Toronto and have been saving to try them for just the right time, which was yesterday - WOW what a delight; they are the BEST ever. I threw some bananas and blueberries in too and the batter held just fine.
Where can I buy more of the GF pancakes in Toronto?
