Gluten-Free Dairy-Free Soy-Free Nut-Free Peanut-Free Corn-Free

Everyone will enjoy these rolls — great with melted butter or dipped in gravy.

Ingredients
    • 1 (19 oz) bag or 3½ cups (525 g) Pamela's Bread Mix
    • 1 (7g) package or 2¼ teaspoons active dry yeast (included in 19 oz bag)
    • 2 eggs, large
    • ¼ cup oil
    • warm water (per directions)
Directions

    Lightly grease a 12-cup muffin tin.

    In the bowl of a heavy duty stand mixer, put Bread Mix and yeast (do not proof the yeast). In a 2-cup liquid measuring cup, pour oil in to the 1/4 cup line. Add 2 eggs, and then fill the rest of the measuring cup with warm water until the entire mixture adds up to 2 cups. Add this to Bread Mix and yeast, and beat for three minutes on medium/high. Fill muffin cups 1/2 full of dough. Let rise for 1 hour and bake at 375º for 30-35 minutes.

    Variations:

    Cheese Bread: add 2 cups finely shredded cheese and 2 tablespoons melted butter (optional: add 1/4 cup chopped green onions or jalapeño peppers)

    Herb Bread: add 2 teaspoons Italian herbs and 1/2 teaspoon onion powder

    Three-Seed Bread: add 2 tablespoons sesame seeds, 2 tablespoons sunflower seeds, and 1 tablespoon poppy seeds

These are amazing. Actually omitted pan and added a little garlic Made nice size balls on parchment paper. Made the best sandwich buns I've had in a long time. Family (who are not Celiac) loved them only bread they want from now on.

How much Baking Soda should I use?

As I can't have Yeast.

    • Hello Blimey, Follow this recipe for Yeast-Free Bread and you can probably put it in the muffin tin as directed.

Hi. I noticed that the recipe here says the bake temperature is 375, but on the bag it says 350 degrees. Can you clarify which is the correct temperature? Thanks.

ead mix, so I purchased a bag and was very excited to try it, but we don't have a heavy duty stand mixer. Is it possible to make this recipe without one?

hi, These are delicious! they rose beautifully but deflated after I took them out of oven. I made as directed with eggs. what am i doing wrong?

Love these rolls. They taste great but mine look like hockey pucks. I followed the recipe exactly. Any tips or hints to make them look like the picture? Also can the recipe be doubled?

    • We use 110 degree water and add 1 tsp of sugar to help the yeast out. :)

You have such an amazing array of recipes and ideas... Such a help in a gluten free/celiac home.
Can this recipe be altered to use the Artisan flour instead of the bread mix? We also have an egg replacer instead of eggs due to an egg allergy. Any tips on using this instead of eggs with the Artisan flour?
