Gluten-Free Dairy-Free Soy-Free Nut-Free Peanut-Free Corn-Free

Everyone will enjoy these rolls — great with melted butter or dipped in gravy.

Ingredients
    • 1 (19 oz) bag or 3½ cups (525 g) Pamela's Bread Mix
    • 1 (7g) package or 2¼ teaspoons active dry yeast (included in 19 oz bag)
    • 2 eggs, large
    • ¼ cup oil
    • warm water (per directions)
Directions

    Lightly grease a 12-cup muffin tin.

    In the bowl of a heavy duty stand mixer, put Bread Mix and yeast (do not proof the yeast). In a 2-cup liquid measuring cup, pour oil in to the 1/4 cup line. Add 2 eggs, and then fill the rest of the measuring cup with warm water until the entire mixture adds up to 2 cups. Add this to Bread Mix and yeast, and beat for three minutes on medium/high. Fill muffin cups 1/2 full of dough. Let rise for 1 hour and bake at 375º for 30-35 minutes.

    Variations:

    Cheese Bread: add 2 cups finely shredded cheese and 2 tablespoons melted butter (optional: add 1/4 cup chopped green onions or jalapeño peppers)

    Herb Bread: add 2 teaspoons Italian herbs and 1/2 teaspoon onion powder

    Three-Seed Bread: add 2 tablespoons sesame seeds, 2 tablespoons sunflower seeds, and 1 tablespoon poppy seeds

Hi,
If making the egg free version as rolls is bake time and oven temp the same?

    • Hi Jennifer, The bake temp is the same, but you may have to bake them longer. Touch the tops to check -- you don't want them to be too soft or they may not be baked through on the inside. Also, with the egg-free version, you should let them cool before serving or they could collapse.

Can you make these on a flat surface without a muffin pan?

    • Hi Whitney, They may spread too much, but you could try letting the dough rise first in a bowl, and then scooping on a tray covered with parchment paper. Bake right away so they have less time to spread. Good luck!

Made these rolls for Christmas Eve and Christmas dinner. My entire family raved about these rolls and couldn't believe they were gluten free. Just bought 25lbs of this flour as this will become a staple in our family. The rolls are soft and doughy not dry and gritty like most gluten free rolls. Love all your mixes Pamela's. You have made being gluten free amazing!!

These rolls were easy to make. I have 4 kids that are gluten free and one celiac. We are so happy to have a good roll recipe that isn't gritty and actually tastes like rolls. So good warm with butter on them!
