I have made this easy to prepare recipe four times with excellent results. I use all organic ingredients (easily sourced at COSTCO), and have loved the results. I am incorporating guava and/or apricot in lieu of the strawberry and raspberry for a change-up in flavors. A huge nod to you for providing a sensational and innovative treat!

Greetings,
My wife now has to eat gluten free but I don't. As I am the cook in our house it is up to me to learn a new way of cooking. And gluten free bread type recipes that taste good are hard to find. I have tried this recipe twice now using Pamela's pancake and baking mix. However, instead of the traditional Monte Cristo filling I put Sloppy Joe filling in once and the second time the filling was made from mostly Patty Pan squash. Both times it turned out to be really good. Not good for gluten free but just plain good. I would serve this to guests o
ing it to a potluck or as a side dish during the holidays. And I wouldn't need to make excuses for it not tasting right or having a gummy texture. I think it would also be really good if filled with a lemon or lime curd filling, maybe even key lime pie filling. Mmmm.

Jaunny L 04/116/2017 04/27/2017Eric, that is so cool, I will love trying all of your suggestions. Sloppy Joe filling sounds amazing. Bread and Butter pickles are the best with sloppy joe's. My mom always canned her own bread and butter pickles, they were fabulous. I love lemon curd, and sometimes make my own simply substituting gluten free flour mix. Thank you! JaunnyReply
