Gluten-Free Dairy-Free Egg-Free Vegan Soy-Free Nut-Free Peanut-Free Corn-Free

Easy to make waffles with our NEW dairy-free Pancake & Waffle Mix.

Ingredients

    Yield: three 7-inch waffles

    • 1 cup [Pancake & Waffle Mixhttp://magento-513015-1628136.cloudwaysapps.com/products/baking-mixes/pancake-waffle-mix/]
    • 1 large egg
    • 3/4 cup water,
    • 1 TBSP oil
      Allergen Options:
    • For egg, use equivalent prepared egg replacer and reduce water by 1/4 cup. Batter should be thick. For water, use 3/4 cup soy, rice, almond or coconut milk.
Directions

    Mix all ingredients until combined. Bake immediately in preheated, greased waffle iron. Serve waffles hot off the iron. For crispier waffles, increase baking time. Extra waffles can be baked, cooled, and then wrapped in plastic and frozen. To reheat, remove any wrapping and heat in toaster.

I make a high fat version that is not dry and produces crepe-like pancakes. I make a triple batch and freeze the leftovers on those few occasions when my grown sons and husband leave any. For 3 cups of mix I use the recommended oil and eggs, 3 cups whole milk, and 8 tbls - 1 stick - melted unsalted butter. I add the oil to the melted butter to keep it from solidifying when milk is added. I add the mix in 1/3 cup measures. Then I let it sit for 10 minutes to be certain the mix is evenly moist. This will not work for waffles but it will work with both Pamela's pancake mixes. Today was my first time with this mix since my store only had the very large Baking and Pancake mix. I get about 22 crepes when using 1/4 cup of the batter per pancake when using this mix. The other mix produces a slightly thicker pancake.

Is there a fix for these waffles being dry? I have tried them twice once with almond coconut milk and once with water. Both times they were dry. Would adding more oil help? I was using the recipe where you separate the eggs and beat the egg white before folding it in.

Hello! I followed the instructions on the back on the box to make began waffles, I leave them on the waffle iron for over 10 minutes but no matter what , the inside will not cook through. I am using a small dash waffle maker , I'm not sure if that has anything to do with it . I also use half the measurements so 1/4 mix, 1/4 water , 1/2 tbs oil ..could that possibly be the issue? Thanks !

I am confused. I just today used this mix (non-dairy) and the recipe on the back of the box said to simply skip the egg, which I did. I was all set to use Ener-g Egg Replacer based on the recipe above when I came to look this up on your website. I wound up simply following the directions (recipe) for Waffles on the back of the box. I used a 1/2 cup of the mix, 1 tablespoon of coconut oil and 2/3 of cup of water. It made 2 waffles in my waffle iron and they were very good! And easy. I'm very satisfied. But confused on the difference between the recipe here on the website and the one on the back of the box. Basically do I need the egg replacer or not?
Note I do not consume eggs or dairy. So, I'm also trusting that there's non of either in this dairy-free version of your pancake and waffles non-dairy mix.

    • Hi Jan, The confusion may be that we have 2 pancake mixes that are non-dairy. This recipe should have been linked to the one the recipe goes with, and we have linked it now. The pancake mix that you used in the box -- our Non-Dairy Pancake Mix -- does not need the egg replacer.

Thank you! I just went dairy-free and your pancake & waffle mix is a staple in our house. I was so disappointed when I realized I was going to have to give it up. Now I can get it gluten & dairy free.

Has this mix changed? When I bought the pancake and waffle mix it had dairy/milk as one of the ingredients.

    • This recipe is for our brand new Pancake & Waffle Mix (non-dairy). We still have our Baking & Pancake mix which contains cultured buttermilk.
