We love this recipe also. My daughter has celiac and loves this pumpkin bread. I've taken it to work and people haven't even noticed it's gluten free. We usually bake it in mini loaf pans. Sometimes we had flax to the recipe for extra nutrition.

WOW, I just made this today and it came out really really good.
I substitute the butter for 1/4 Cup of coconut oil melted. I added more spices. 2 teaspoons of cinnamon, 1 teaspoon of ginger, 1/4 teaspoon of nutmeg. I baked it in a muffin pan for 16 min.
has anyone tried doubling the recipe? if so how did it came out? :)

Fantastic! The best pumpkin bread I've tried, GF or not. I doubled up on some of the spices and even a little more cinnamon. I've made this several times in a loaf pan and it turns out perfectly every time. I also doubled up on the topping. I will try with banana too after reading another comment about how great that is too.

I love this recipe. We have a retreat and I often fix this for guest. First, they are surprised when I tell them it is gluten free. Second, I am a diabetic, so I sub monk fruit or stevia for the sugars...and for me it is heaven!

My entire family absolutely loves this recipe. It comes out perfect every time. I follow the recipe to a tee. One time I tried using a different GF flour/baking mix. It sucked. This recipe's success is dependent upon the Pamela's baking and pancake mix. I was so happy to find the recipe on this website.

I do not use a big loaf pan because it didn't get baked in the middle. I use four small pans. Every loaf turns out perfectly!!

This is the easiest most delicious GF item I've made! Everyone begs me to bake this. No one knows it's GF. I don't like the pumpkin bread mix you offer as the spices are not to my tastes. Thank you

This is by far my favorite and everyones. I use a round cake pan and make two. I double the topping
though....love that stuff...I add in extra spices too....cut into wedges...perfect anytime with whip cream or ice cream or with a brunch. My last few purchases do not have the recipe on the bag anymore. so sad.but I found this site to get it again. yeah for me.
