This is such a great recipe and can be converted to vegan quite easily. I used flax seed as egg replacer and also used Pamela's Bread Mix Flour Blend and they turned out light, fluffy, moist, and chewy. This is our go-to waffle recipe. Thanks for posting and sharing!

Very easy recipe and my waffles came out great! I used a Belgian waffle maker and made a total of 2 1/2 waffles. I liked that there was no sugar in the recipe, if you love maple syrup as I do, that's all the sweetness you need. I froze 1 1/2 of them and look forward to eating them in future!

These are light and fluffy waffles. I make a double batch and freeze the extras so we can just toast them up the next time.

Pamela's waffles are great. A lot of gluten-free products that have come on the market are nasty. Don't be afraid

Love these! We make them every Sunday morning with different toppings. I find that the stiffer the egg whites are it makes them fluffier! yum!

My husband makes these in our Epicure silicone waffle-baking pan. We don't need a waffle iron and there is almost no cleanup that way. Just make sure you leave the waffles a bit longer so they are crispier - we think they're better that way. I like mine topped with greek yogourt & fruit and my husband likes low sugar fruit preserves and lots of butter on his. They are great either way.
