I should also add to my previous review - I make them as mini muffins. My children do not eat 4 huge muffins at a time lol! I was trying to swap entermanns mini muffin snack packs and make my own. Phew.

I did this recipe with almond milk and chocolate chips to make my 5 year old to give her chocolate chip muffins for school and she ate 4 muffins right away! My other daughter loved the batch I made with wild blueberries! This recipe is great!!!! Thank you!!!!

Really liked this recipe ,very moist. Had to make a couple of substitutions based on what I had on hand. I double the recipe to make 12 muffins. Didn't have any pecans. Substituted dried cranberries. Only had one egg so I added 1 quarter cup extra Pamelas pancake mix and 6 oz. Vanilla yogurt a pinch of salt and 1Tbs. Cinnamon 1 half tsp. Cardamon. Next time I will try the recipe with pecans.

Trying this tonight, but subbed grated zucchini for the dates, and added a couple tablespoons of oil. I have never seen a muffin recipe, gluten free or regular, without oil! Hoping the Pamela's mix has a tad bit of salt too, since that is also missing. Will let you know!

kate 01/25/2015 01/26/2015update! They came out fabulous. Definitely some of the best I've ever made. I will keep my additions and substitutes! I forgot to mention I also added a teaspoon of pumpkin pie spice. Cinnamon alone would be equally great!Reply
