Chocolate Chip Scones

Gluten-Free Dairy-Free Egg-Free Vegan Soy-Free Nut-Free Corn-Free

Add chocolate chips to our Biscuit & Scone Mix for an anytime treat.

Ingredients

    Yield: 6 large or 8 medium scones

    • 1 bag Pamela's Biscuit & Scone Mix
    • 1/2 cup sugar
    • 8 TBSP butter or or butter alternative, cut in 1/2” pieces/well chilled
    • 1 cup milk, soy, rice, or almond milk
    • 1/4 cup chocolate chips
    • 1/4 cup chopped nuts (optional)
    • Optional: brush with milk and sprinkle with sugar before baking
Directions

    Place rack in top third of oven and pre-heat oven to 375°. Combine dry mix and sugar. Using a stand mixer with paddle attachment or pastry blender, cut in butter until pea-sized crumbs are formed. Add milk, chocolate chips and nuts if using and mix until just incorporated. Scoop onto a piece of parchment or plastic wrap and gently form into a round, 1” to 1-1/2” high. Cut into wedges and place on greased or parchment covered cookie sheet.

    Bake for 20 to 24 minutes until just starting to brown.

If you don't want to tear out all the stuff around your stand mixer, can you mix it by spoon?

If I'm using regular Pamela's Pancake mix instead of Scone mix, how much is equal to a bag?

    • One bag of Biscuit & Scone Mix is 13 oz. The recipe may not turn out the same when substituting the mix.

Tried this for the first time today...I live in a high altitude area so I added an extra 1/2 liquid (I used Almond Milk) I also used more chocolate chips than it calls for, sprinkled them with sugar prior to baking and made an Orange Glaze to top them...turned out really good.

Though these scones are not like your average scone, they are still a family favorite. I use them more like cookies because regular cookies are very sweet and these are just good. I recommend you use tiny chocolate chips for this recipe, but I substitute blueberries. I use parchment paper to keep it from it from sticking. Enjoy!
