A wonderful mix of chilies, cheese and eggs, you just can’t go wrong with these comfort foods baked to perfection.

Ingredients
    • 4 tbsp margarine, melted
    • 5 eggs
    • 1/4 cup Pamela's Baking & Pancake Mix
    • 1/2 tsp baking powder
    • dash of salt to taste
    • 1, 4-oz can diced green chilies
    • 1/2 pint (1 cup) small curd cottage cheese
    • 2 cups shredded Jack cheese
Directions

    Beat eggs. Stir in Pamela's Baking & Pancake Mix, baking powder and salt. Add melted margarine. Stir in remaining ingredients and pour into well greased 9x9-inch pan.

    Bake 15 minutes at 400°, and then reduce heat to 350° for an additional 30-35 minutes.

    Cool slightly and cut into small squares. Serve warm.

This is amazing! I ended up not using cottage cheese since I didn't have any, but still tastes great! My husband loves it and he's never too keen on gluten free. Definitely recommend.

I can't believe there aren't more 5 star reviews for this recipe. I love it and use it all of the time. I even change it up from time to time and use ingredients like steamed broccoli and cooked ground sausage. It is a quick, easy recipe that is not only delicious, but also freezes extremely well. I almost always have some in my freezer for when I want a "little something" or even breakfast when I don't feel like cooking.

DELICIOUS! And easy :) I used pepperjack for the "Jack" cheese and it was perfect. Will make this again!
