Just made these with the egg white. Turned out beautiful. This mixture is very gooey, just like the consistency of dough you drop in for dumplings... but even gooier. You would have to flour it quite a bunch to roll it which may make it dry and crumbly. It was easier just to turn the bowl over, plop the mess out, shape on top of parchment and cut with floss.
If you did put meat inside... it would be hard to do. You could put it on top of meat maybe keeping in mind your cooking time. These only took about 20 minutes in my oven. You would maybe need to precook your beef.
Anyway, they are lovely and even the raw dough is delicious.

i have a question: can you use this recipe as dumplings or to drop them on top of a chicken pot pie type recipe without rolling and baking them:
