Gluten-Free Dairy-Free Egg-Free Vegan Soy-Free Nut-Free Peanut-Free Corn-Free

Simple recipe for pancakes made with our Pancake & Waffle Mix.

Ingredients

    Yield: six 4-inch pancakes

    • 1 cup Pancake & Waffle Mix
    • 1 large egg
    • 3/4 cup water, or soy, rice, almond or coconut milk.
    • 1 TBSP oil

    Allergen Options:
    For egg, use equivalent prepared egg replacer and reduce water by 1/4 cup. Batter should be thick.

Directions

    Mix all ingredients together to combine. Batter should not be too thin or too thick. Add 1 TBSP additional water if batter thickens. Preheat griddle to medium/ med-high heat, or 350º to 375˚ for electric griddles. Pour batter onto lightly oiled griddle. When bubbles appear and bottom of pancake is golden brown, flip once and continue cooking until 2nd side is golden brown. Serve immediately.

    Extra pancakes can be cooked, cooled, and then wrapped in plastic and frozen. To reheat, remove any wrapping and microwave pancakes wrapped in a paper towel until hot, approximately one-minute.

I ditto everything Diane said above, but NOT about this new dairy-free mix -- only about your original GF mix! (Though I do use egg, and add mini-choc chips & blueberries, and the pancakes are AMAZING, have always been a huge winner for years.) Last time I was at Whole Foods there was only this bag, so I didn't think much of it, thought it was a design change. I hate to put it this way... and I almost never post online reviews... but UGH!!!! I had my boyfriend's grand-kids (age 7 and 8) over fo
eakfast-as-dinner tonight, planning to delight them w/ my famous choc. chip pancakes, but alas, it was not to be. These are just... not the same, nowhere close. They take FOREVER to cook and their texture is simply not pancake-like.
PLEASE make it more clear that this is a completely DIFFERENT mix, so others don't get confused and botch an entire meal!!

    • Hi Marcy – Pamela created the Pancake & Waffle non-Dairy mix to meet the demands of the increasing number of folks who cannot have dairy. It is a completely different blend with different tastes & textures. It is also a completely different color package, different pancake drawing and a different name which specifies non-Dairy on the front of the bag. I will forward your comments to Pamela. This is the best gluten free pancake mix I have ever tried! My daughter has a wheat and egg allergy. I replace the egg with banana and add chocolate chips or blueberries and my family of 5 can't get enough! Thank you for making breakfast easy and delicious!

Hello,

I purchased a bag of the pancake and waffle mix, and there is Milk in the ingredients, So that makes all the recipes Not dairy free..

    • HI Amy - The new Pancake & Waffle mix (non-dairy) does not contain any dairy ingredients. In the box below the ingredient panel it does contain a possible allergen warning so folks know what is processed on the same equipment.
