Cassava Flour Pancakes

Gluten-Free Dairy-Free Soy-Free Nut-Free Peanut-Free Corn-Free Grain-Free Sugar-Free Paleo

Surprise and delight your loved ones with these tasty, fluffy, gluten-free and grain-free Paleo pancakes. For added decadence, try serving them with whipped vanilla coconut cream and/or fresh fruit!

Ingredients

    Yield: about eight 4-inch pancakes

    • ¾ cup (84 g) Pamela's Cassava Flour
    • ¾ teaspoon baking powder
    • ½ teaspoon salt
    • 2 eggs, large, beaten
    • ¼ cup coconut milk
    • ¼ cup coconut oil, melted
    • 2 tablespoons honey
    • ½ teaspoon apple cider vinegar
    • nonstick cooking spray
Directions

    In a medium bowl, whisk together Cassava flour, baking powder, and salt. Add eggs, coconut milk and oil, honey, and vinegar, and mix well with the whisk until smooth.

    Heat large skillet or griddle to medium heat (350°). Spray cooking surface with nonstick cooking spray. For each pancake, scoop 2 tablespoons batter for small pancakes or ¼ cup for medium, onto skillet and cook until a few bubbles form on top and edges are just starting to firm, about 2 to 3 minutes. Pancakes will be a little sloppy when you turn them—push spatula under half the pancake and gently flip it. Cook for about 1 more minute until cooked all the way through. Remove from pan and serve immediately.

I love these and have made them several times. I was looking for a cassava flour pancake. Because we are not dairy free, I used milk instead of coconut milk and butter instead of oil. Delicious!!

I used half the honey and lemon juice in place of the apple cider vinegar and they turned out perfect :)

Hello, I would like to see the nutrition facts for counting carbohydrates. I love these pancakes. Also, I prepare them with flax eggs and they are delicious! Thanks for sharing the recipe.

    • Virginia you can Google an egg substitute easily, either one that uses chia seeds and water or one that is already in a bag to purchase, in powder form. Bob's Red Mill has a product that is under $3. I haven't seen to purchase in this brand, but that doesn't mean that there aren't any other brands available for ready use. I hope this helps.
