Chicken 'n Dumplings

Gluten-Free Egg-Free Soy-Free Corn-Free

The perfect comfort food, especially on cold days. Made with Pamela’s Baking & Pancake Mix. Recipe courtesy of Chandice from Gluten-Free Frenzy.

Ingredients
      Soup:
    • 4 cups organic chicken stock
    • 2 cups cooked free-range chicken shredded
    • 1 cup chopped carrots
    • ½ cup chopped celery
    • ½ cup frozen peas
    • 1 bay leaf
    • 1 tsp dried parsley
    • 1 tsp Real Salt
    • 1 tsp black pepper
      Dumplings:
    • 2 cups Pamela's Baking & Pancake Mix
    • ¼ tsp dried thyme
    • ½ tsp dried parsley
    • dash of ground nutmeg
    • ½ tsp Real Salt
    • 2/3 cup organic milk
Directions

    Soup:

    Combine all soup ingredients in a large stock pot. Cook until carrots begin to soften. Bring to a boil for dumplings. Remove bay leaf.

    Dumplings:

    Combine dry ingredients then slowly add milk and mix lightly. Drop by heaping tablespoons into boiling soup. Cook until dough is cooked through. About 10-15 minutes.

Okay, taking the advice of Candice (above review on 2 Jan 2018)I added one egg and 4 tbsp of butter to the dumplings and they were fluffy and wonderful after simmering on low for 30 minutes. Still good for leftovers the next day! I also put mushrooms and carrots in mine. Delicious.

This was too dense in texture. I tried different things to make it more chewy/soft without breaking down. I added 4 TBS butter, 6 TBS buttermilk, and 1/2 tsp baking soda. That's the best I could get it. It's still not perfect. I tried the suggestion with the 2 eggs and butter but that was very dry and crumbly. I used to love piecing up canned biscuits for my dumplings. Matching gluten biscuits is very difficult!

These were awful! Completely went to mush I even tried tweaking them nothing seemed to work. Glad I tested them in water and didn't ruin my homemade soup!

I made the dumplings tonight and put them on beef stew. They are denser than the ones I remember making with Bisquick before my gluten issues, but they were still very good. I covered the pot in mine and they cooked perfectly in 12 minutes on a good simmer.

I've used this recipe for years & my family has always loved it. For those of you who end up with mush, I would guess that you are using too much liquid. Not all measuring cups are exact! Try adding a bit of milk at a time until you have a consistency like a drop biscuit dough. I generally put them on a chicken stew. I cook them 10 minutes without the cover & then 15 minutes with cover on. I think putting the lid on the pot helps to make them fluffier. Enjoy!

Since I am both gluten-free and lactose-free, can someone comment on whether I can use Pamela's Cornbread & Muffin Mix (instead of the Baking & Pancake Mix)? The ingredients (sans the Cultured Buttermilk and Baking Soda) are similar. -- Thank you!

This turned out great, but I did need to make a couple of adjustments. I added onion, because we like it, and doubled the recipe, because we're a big family. When I added the dumplings, they soaked up too much broth,so I quickly added more. I have some very picky eaters, and all but one (he's 4, and my pickiest) loved it!

I made this tonight and added 2 eggs and 4 tablespoons of melted butter in the dumplings. They turned out amazing! I had first tried them following the directions and they were much better with the addition of the eggs and butter. I also added 1 cup of milk to the soup and thickened it some with cornstarch. Delish!

    • I tried this tonight but the interior was very crumbly and a bit dry! I'm not sure what went wrong. I followed to a T. I need soft and chewy.
