Gluten-Free Soy-Free Peanut-Free Corn-Free

Enjoy your own crunchy, twice baked cookies with your favorite coffee or tea or all by themselves.

Ingredients
    • 2 tablespoons butter
    • ⅓ cup sugar
    • 1 teaspoon almond extract
    • ½ teaspoon vanilla extract
    • 1 egg plus 1 egg white
    •  cups Pamela's Baking & Pancake Mix
    • ½ cup sliced almonds
Directions

    Cream together butter and sugar, then beat in extracts with the egg and egg white. Add Pamela's Baking & Pancake Mix with almonds and combine.

    On a greased cookie sheet, form a log 3-inch wide log the length of the cookie sheet. Make sure log is about 2-inches from the edge of the pan, as dough will spread when baking. Bake in a preheated 325° oven for 35 minutes. Remove the biscotti and turn down oven to 300°.

    When loaf is cool, slice in 1/2-inch slices with a serrated knife. Lay pieces on their sides and re-bake for 25-30 minutes in 300° oven.

    For a nice variation add candied fruit, chocolate chips or raisins to the dough with/or in place of the almonds. Or try other nuts like pecans, walnuts, macadamia, etc.

How should these be stored and how long will they be good? Just wondering. I loved the convenience of the biscotti products previously offered so would like to be able to bake and store or freeze for later. Thank you!

I was hoping for a recipe with less sugar since my husband has to watch gluten and sugar intake. I am going to explore agave powder as a possibility. Any suggestions?

I really miss the chocolate walnut biscotti that Pamela's used to make. It would be nice to have a recipe for that if they aren't going to have it as a product again.

These are delicious! I am going to try different flavors, and work on getting it to hold together. My log looked great going into the oven, but came apart in big chunks after baking the first time. Only the ends held up to the slicing. Undaunted, I enjoyed the irregular, but tasty, chunks with my tea very much. Thank you!

I missed biscotti so much when diagnosed with Celiac! I was THRILLED to find this recipe and have made many variatons such as dried cherries with dark chocolate chips, dried apricot chunks, coconut and coconut extract in place of almond extract. All turned out perfect!
