We've been making the eggless bread with Pamela's gluten-free dairy-free bread mix for a while and wanted to try something a bit different and less sweet. I made this and by chance decided to weigh my flour, which is not something I normally do. I realized the 19 oz. package usually makes 1 loaf, yet this recipes calls for 3 1/2 cups. When I weighed 3 1/2 cups of the mix, it came in at a whopping 24 oz! I decided to only use 19 oz. and the result was delicious and lighter/less dense than the loaves we usually get. Really enjoyed the flavor of this and the crust was nice and crisp when it was hot out of the oven, but did soften within a couple hours when we served it. We will absolutely be making this again, but I wanted to share the tip to weigh your flour with others as I had no idea it could make that big of a difference.

This was my first recipe with the bread mix, as I usually make rolls with the pizza crust mix. I found this recipe to be slightly too wet even when measuring carefully. Rather than rising, the dough spread while baking. After cooling, although it set up properly and it isn't exactly gummy, it's still a bit damp. I'm also surprised at the lack of vinegar flavor after putting two tablespoons in. I think this mix is slightly more bitter then what I am used to and definitely far sweeter than I like. For me it's just not suited to a French bread. I'm going to go back to the pizza crust mix for this purpose in the future, just as soon as I use the bread mix up on something sweeter instead of fo

Will this recipe work in a bread machine with a gluten free program? Thought I'd ask, hate to experiment with an expensive (but worth it!) mix.

It is better to bake this in the oven if you want the outside to get crispy, but it may work in a bread machine as well (we have not tried this one), just not as crunchy. Good luck!

Would adding another tablespoon of vinegar ruin this in any way. We LOVE this bread, but would REALLY dig it if it was a bit more tangy. Gluten free sourdough for the WIN!

I tried this recipe & mine didn't rise very much & when I cut them, they were kind of doughy inside. I was disappointed. The flavor of the crust is good. I would like to know what to do differently so it will rise & cook all the way through. I baked them @ 350 for 70 minutes.

I made this recipe last night and am excited to try my French bread with my basil pesto! But.... The only thing I noticed was that my bread didn't really rise..... Any suggestions?

Elisa 09/250/2015 09/08/2015Place yeast in the 1-3/4 cups of warm water (not hot, just a bit warm to the touch, 75-80 degrees F) with a pinch of sugar. Gently stir and let sit for 10 minutes or so. Then combine all ingredients. This is what I did and my loaves rose, although I can't guarantee that that's the reason for it :). Doesn't hurt to try though! Good luck and hopefully your loaves are tasty despite not rising!Reply

Pamelas Customer Service 09/250/2015 09/08/2015Hi Leanne - How did your bread taste? Gluten free items will not usually rise as much as traditional wheat items. Do you know what size your loaf measured before and after baking? If you want a larger loaf you can try shaping the dough a little larger and see if that helps. Denise, Pamela's Customer ServiceReply

I make 3 loaves instead of 2 and I bake it on stone. The result is delicious!! Tastes like sourdough to me :).

My mother-in-law baked several recipes from a large bag, one of them being the french bread without vinegar. My husband loves ham and cheese wedgies from the Italian restaurants, so that is what he made for a quick dinner for my girls while i worked late. I'm going to search this site for pizza crust with this mix.

I love this recipe. Only problem is if I get the very center done the outside is too brown. So I leave the center a bit undercooked so the crust isn't burnt. Makes great toast though. First gf bread I've made that doesn't taste like cake! If you have any suggestions to help I will listen :)

ACA Catering 01/11/2015 01/12/2015When you see the crust starting to turn a golden brown, cover it with foil for the remainder of the cooking time. This will get the inside done and keep the outside from burning.Reply
