I will be making this delicious bread again and again with fun variations, like subbing sugar free chocolate chips for the raisins! I also need to practice rolling this dough. I found it easier to handle the dough when I dipped my fingers in cold water rather than oiling them. Next time I will use very little oil on my parchment paper to prevent my dough from sliding around too much.
I used Swerve instead of the sugars with great success, as well as soy milk in place of the dairy milk. I also replaced the raisins with dried tart cherries. I have been enjoying a toasted slice every morning without the painful inflammation from my food sensitivities.
This bread has kept very well in a zipper plastic bag on the counter, and I'm down to the heels. Great recipe!

Has anyone tried this one with an egg substitute? I usually use a mixture of ground flax and arrowroot.

Great recipe, I was having craving for cinnamon bread and this did the trick. Could do with a little more explanation, for example what is considered a large piece of parchment paper? And what is the front end of the dough when pressed out on the paper. For me this was actually the side, assuming that I was making a rectangle of dough.and the front end was the short end of the rectangle.
