Experimenting with Pamela's bread mix, I started out to make pizza; however, the recipe made two and I only wanted one. I switched over to the calzone recipe because it would take less time.
I made 6 instead of the 4 or eight because there were three people eating them. This made a slightly thicker crust and worked wonderfully well. They were delicious. We used more marinara sauce over the top.
As far as labor intensive, I didn't find them any worse than making enchiladas or burritos.

This worked great, but I did not use extra flour to keep it from sticking. Instead, I used wet fingers to shape the dough into little circles on the parchment paper, eight 6" circles. I also sprayed each section of parchment paper with GF cooking spray beforehand. Nothing stuck this way. I was also very careful to not overfill each circle. We still had a bit of tearing, but since all my fillings were "dry" I had no spillage. (I did not use sauce inside the calzone.
We had this for a small birthday celebration and non-GF guests went for seconds!
I would make this again.

This recipe was a disaster! The dough is too thin and no matter how much rice flour you use, it still sticks to the parchment paper and ends up tearing the dough - exposing the contents. Then, the "extra" rice flour that you must use to get the dough off the parchment but won't come the parchment afterwards burns in the oven...Unfortunately, Gluten free Calzones just don't work...Stick with pizzas that don't have to be folded over!

A little labor intensive but wonderful! It also gets easier after you get the hang of them. Calzones are back on the menu!!
