Amazing Bread

Gluten-Free Dairy-Free Soy-Free Nut-Free Peanut-Free Corn-Free

Use this wonderful, tasty bread for all of your traditional bread needs!

Ingredients
    • 1 bag (3½ cups) Pamela's Bread Mix
    • 2¼ tsp active dry yeast or 1 yeast packet 7g (packet enclosed in 19oz mix bag)
    • 1 egg large + 3 egg whites OR 2 large eggs
    • cup oil
    • warm water (per directions)
Directions

    In a Bread Machine

    Setting suggestion - Basic White Bread, 2 lb loaf, Medium Crust. Do not use Gluten-Free setting.

    In a 2 cup liquid measuring cup, measure 1/3 cup oil, add eggs, then fill with warm water up to 2 cups liquid, plus 2 TBSP additional water. Pour all liquids into bread maker, add bread mix and yeast. Start machine and scrape down sides and corners of pan while dough is mixing. After

    baking, remove from pan and let cool before removing paddle and slicing. High Altitude: Use 2 cups total liquid.

    Oven Baking

    Use a HEAVY DUTY STAND MIXER with whisk attachment. Do not use bread hooks. In a 2 cup liquid measuring cup, measure 1/3 cup oil, add eggs, then fill with warm water for a total of 2 cups, plus 2 TBSP additional water. Add to dry mix and yeast, then beat for 3 minutes on med/high.

    Pour into lightly greased 8”x 4” bread pan, and smooth the top of the dough with a spatula. Let dough rest for 60 to 90 minutes in a warm, draft-free spot. If your kitchen is cold, you can turn on your oven for a minute or two at a low temperature and then turn it off and place the loaf pan in the oven (then be sure to take it out when you preheat the oven for baking).

    After 60-90 minutes, the dough should rise but if not, it will rise when baking. Preheat oven to 350°. Bake for 60 to 70 minutes. Let sit for 10 minutes then carefully remove from pan and cool on a rack. Though tempting to eat the bread hot out of the oven, we recommend letting it cool before slicing.

    ROLLS: Fill lightly greased muffin tins 1/2 full of dough. Let rest for one hour and bake at 350° for 25-30 minutes.

    Variations -- add the following to the Pamela’s Amazing Bread Recipe above:

    • WHOLE WHEAT: 2 TBSP Molasses.
    • THREE SEED BREAD: 2 TBSP sesame seeds, 2 TBSP sunflower seeds, and 1 TBSP
    • poppy seeds.
    • CHEESE BREAD: 2 cups fine-shredded cheese and 2 TBSP melted butter (optional: 1/4 cup chopped green onions or jalapeno peppers).
    • HERB BREAD: 2 tsp Italian herbs, and 1/2 tsp onion powder.

    CINNAMON BREAD: Use OVEN BAKING recipe only. In a separate bowl, combine 2 tsp cinnamon and 1/4 cup sugar. Fold cinnamon mixture into dough approximately three times to create cinnamon swirls. Let rest in pan for one hour and bake.

    CROUTONS: Cut slices of bread into small squares and bake on a cookie sheet for two hours in 200° oven. Cut larger, thinner pieces to make toasts for appetizers.

Made a loaf for my Gluten free friend. After tasting it he did a Happy dance. Bread stayed firm and was the best he had ever tasted. do you have a recipe for hot dog rolls

This is a first gluten free bread tasting so good that my family chooses it over their regular gluten bread for sandwiches. It makes my very limited diet pleasurable.
It’s amazing in a French toast. Stays moist and yummy for couple of weeks if kept in sealed container in a fridge. Love it.

I made this recipe but the bread is SOOOO crumbly. before i even baked it it was super thick and crumbly I am not sure what i did wrong

This is what I do to avoid over-browning on top, and an under-finished center-
1. Use ceramic or glass (not metal) loaf dishes
2. Shape a foil tent and seal it over the top of the bread for the ENTIRE baking time (leave enough room for rising)
3. Check the center of the loaf with a thermometer towards the end of the baking time-190 degrees F is perfect. If the temp is too low, continue baking and checking every 5-7min.

This mix worked perfectly! Much better than any store brands we’ve tried. Definitely using this again as it was the best GF bread we’ve had!

This is my go-to bread mix and I've been using it for years with my bread maker. Unfortunately it's hard to find yeast right now. Is there a workaround? With sourdough starter, for instance. I'm not much into experimentation and I don't want to waste any of the mix by getting it wrong.

My husband had this at a potluck lunch, warm out of a bread maker. Couldn’t believe it was gluten free. He came home and asked me to bake a loaf. First try was a great success. The only thing I did a little different was add one tablespoon of minced onion, one teaspoon of Italian seasoning and two teaspoons of onion powder. Next time I’ll add about a tablespoon of dried dill weed instead of the Italian seasoning. If will be fun to experiment.

I found this bread mix at a Clark's Nutrition store in my area and decided to try it. I used the small package of bread mix in my bread machine and it came out great the first time and the whole family loved it!
I made it with 2 large whole eggs and used extra virgin olive oil.

Our customer service rep is contacting you. In general, we recommend putting about 2 tablespoons less water if your loaf is sinking in the middle.

Are there measurements and directions to make a one and a half pound loaf? I have an olde
ead machine that I would like to be able to use again. I bought a four pound bag of mix, but I didn't realize that the recipe was only good for two pound bread machines. The mix is expensive enough I'm reluctant to experiment, and I don't want to invest in a new bread machine until I know I'm going to like the bread. Thank you!

We have tried it, but to convert a 2 lb loaf to a 1.5 lb loaf, try multiplying the ingredient measurements by .75 or 3/4.
So, you would have:
2.62 cups or 2 5/8 cups or 404 grams of Pamela's Bread Mix
1.69 tsp or 5.25 grams active dry yeast
1.5 large eggs
1/4 cup oil
warm water (per directions, but use 1.5 cups instead of 2 cup measuring cup)

    • Jennifer I know this has been a long while, but I use a Hamilton Beach bread maker and just used the 1.5 lb setting and gluten-free cycle (the bag didn't say any different - just today seeing the notes!) My bread turned out great! SO great I am ordering 3 of mix bags on Amazon (the price is better tht way) I came here to see if instant yeast was ok to use. Hope this helps. I like the Hamilton Beach maker was only $60 on Amazon.Regi
