Gluten-Free Soy-Free Nut-Free Corn-Free

A touch of sweetness is added to the regular bread recipe.

Ingredients
    • 1 19-oz. bag (3 1/2 cups) Pamela’s Bread Mix
    • 2 ¼ tsp active dry yeast, or 1 yeast packet 7g (included in 19 oz bag)
    • ¼ cup sugar
    • 3 eggs, large
    • ½ cup milk
    • ¼ cup butter, melted
    • ¾ cup warm water
Directions

    FOR BREAD MAKER

    Settings: Basic White Bread, 2 lb loaf, Medium Crust. Do not use gluten-free setting.

    Pour all liquids and eggs into bread maker, add bread mix, yeast and sugar. Start machine and scrape down sides and corners of pan while dough is mixing. After baking, remove from pan and let cool before slicing.

    FOR OVEN BAKING

    Preheat oven to 350°. Use a HEAVY DUTY STAND MIXER with whisk attachment. Do not use bread hook. Whisk dry ingredients together in bowl of stand mixer. In small bowl lightly mix liquid ingredients, add to bowl of stand mixer and beat for three minutes on med/high.

    Pour into lightly greased 8” x 4” bread pan, fitted with a parchment collar. Push dough evenly into pan and rub top with oil, make a few slits with a sharp knife on top to prevent splitting, and drape with plastic wrap. Let dough rest for one hour in a warm, draft-free spot. It should double in size, but if it doesn't, dough will rise while baking.

    Bake for 60 to 70 minutes (final instant read thermometer reading 205°). Let sit for 10 minutes then carefully remove from pan and cool on a rack.

I made this in my Zojruishi breadmaker. set for medium crust, followed instructions to the letter.

It was perfect on the top a light golden brown BUT THE SIDES AND BOTTOM were burnt.
Had a time scrubbing out my breadmaker. After cutting off the burnt sides and bottom, it was

okay but more like a spongy pound cake. Unless there was a way to mix it in the breadmaker

on dough setting, and then bake in the oven.....this is a waste of ingredients.

If you have difficulty getting the bread to rise, heat the milk, butter together and let cool. Add sugar and yeast, gently mix together and allow yeast to activate (maybe 5-10 min). Then add to dry ingredients.
Also substitute a small can of pineapple juice for water and it will taste more like Hawaiian sweet bread. Coconut sugar also works too.

Fabulous, absolutely fabulous, Sweet Bread! Pamela's products are excellent. They work. And when you need things to work because you are NOT A BAKER by trade, then this is it! Trying to go Gluten-Free isn't easy. And with a bread machine, you need mixes that work. Unless you're rich! Thank you Pamela's so much for taking the time and effort to perfect your mixes.

My husband, who is pretty particular his bread, LOVES this bread. Its texture is more dense than "fluffy white bread", but it has more elasticity and moisture than most homemade bread and other gluten free breads we have tried. It has a great texture and doesn't fall apart when he makes sandwiches. THANK YOU PAMELA'S!! You are a lifesaver for our family!
