Used Artisan multipurpose blend. No joke, best tortillas ever!! Whole family liked them.

Johnathan 06/172/2017 06/22/2017Without yeast was not as good for us. The biggest deal for us is to use the Artisan Blend flour. We've tried a bunch of other flours and none of them have really worked out. Also, after experimenting about a dozen times, we found that mashing the tortillas onto parchment paper with your hands works awesome. You slap the tortilla face down on the skillet, then peel of the parchment. The non-stick rubber liners were too inconsistent, and a third of the tortillas would tear. I've been wanting to try this, but I'm allergic to yeast. Since the recipe says to NOT allow the dough to rise/proof before you cook it, is there a reason to add yeast to it at all? There's not any yeast in my gluten-flour tortilla recipe, so I'm not sure what its purpose is here...

Pamelas Customer Service 01/25/2017 01/26/2017Hi JC, Pamela thinks you could try this recipe without the yeast, but you may want to add 1 tsp of baking powder. We have not tried it this way. The yeast adds a certain flavor, but may not be necessary for the texture of the tortilla. Please let us know if you try it this way.Reply

I modified this a bit, mostly due to what I already had on hand, partially because of the reviews. I made it with 1 cup bread flour, 1 cup baking and pancake flour, 2 1/4 tsp yeast, 1/3 cup canola oil, 1 cup warm water. It was delicious!!! It was a bit more fluffy than the picture, but was great with a taco even to my husband and son who are not gluten free. Can't wait to make crepes with them next!

When I use my tortilla press, I find it works much easier to use a gallon size plastic storage bag (the type that comes with a twist tie). I simple cut the bag in half, and "sandwich the amount of dough for one tortilla between the two pieces of the plastic. They come off very easily. Just be sure not to press them too thin!

I have tried tortillas using both Pamela's baking flour and the bread flour and they did not come out very good. However, using the Pizza dough mix worked great. Has anyone used a tortilla press using the pizza mix? I think using one with parchment paper would really give you the way to have a consistent size, thickness, and shape.

the person who used the baking mix is sorely wrong. I didn't have pizza mix, can't find it in my area stores, so I thought I could sub the baking mix. It was a mess. Wouldn't peel from the parchment and was way too liquid. made a mess of my tortilla press. Wound up throwing the raw dough away. Will have to order the pizza mix online I guess if I want to make tortillas. Thought I should warn others that the baking mix IS NOT A SUBSTITUTE! Not without a lot of tweaking and experimenting I would say and the mix is too pricey for experimentation.

These are really good! I am just now starting to cook gluten-free and am trying lots of new things. The tortillas were not as soft and flexible as I am used to, but I think that is probably the chef and not the ingredients. The taste is great!
