Gluten-Free Soy-Free Corn-Free

Our original Banana Bread recipe that everyone loves! This delicious and satisfying banana bread is made with our Baking & Pancake Mix!

Ingredients
    • 4 TBSP butter, melted
    • ½ cup sugar or honey
    • 2 eggs, beaten
    • 1 cup banana, mashed
    • 1¾ cups Pamela's Baking & Pancake Mix
    • ½ teaspoon salt
    • 1 teaspoon vanilla
    • ½ cup nuts (optional)
Directions

    Preheat oven to 350°.

    Beat together butter, sugar or honey, eggs and banana. Add remaining ingredients and mix together. Pour into a greased 8" x 4" or 9" x 5" loaf pan. Bake for 1 hour, or until an inserted toothpick comes out clean.

This is the best banana bread. You can’t tell it is gluten free. I make this all the time, generally adding chocolate chips. Everyone loves it

I have tried a few gluten free flours and this is the best one in my opinion because the texture matches regular wheat flour texture the closest. Breads come out almost as light and spongy as regular flour. The taste is great, too. This recipe in particular is also my favorite as the flavor is great. I use a combination of coconut sugar, stevia and regular sugar. I also add a tsp. of cinnamon. My kids love them.

best banana bread, hands down. Been using this recipe for years. My kids like to add in chocolate chips. I use a 9X9 pan instead of a bread pan to get it to bake evenly. We eat the bread with cheddar cheese. YUM!

This recipe is delicious. I only use 1/4 cup honey as my sweetener instead 1/2 cup. My daughter has an egg allergy. I substituted 2 chia eggs for the egg. It gave the bread a nice flavor. I put foil over the bread part of the time during baking for an hour. The bread needed a full hour to bake, but without the foil, the bread would have browned too much. My daughter has celiac disease. She said this is the best banana bread recipe I have found. None of Pamela’s mixes have ever caused a reaction. I use a LOT of the bread baking mix for delicious bread loaves. I also buy a lot of the pizza crust mix too for my daughter vegan bagel bites I make OFTEN.

I have made this banana bread several times as it’s a family favorite. I usually add chocolate chips or blueberries. I also make it with honey instead of sugar. My friends and family love it and don’t seem to mind that it’s gluten free.

I have been making pancakes with this mix for years, but I tried to make the banana bread today and was thrilled with the results! It had to be easy for me to try it; I am a cook who doesn't bake! I did add a little bit of cinnamon and nutmeg for flavor, and we are really enjoying this bread. Love Pamela's products!

Best banana bread ever! Family and friends flip over this moist delicious recipe I cannot show up without it. No one believes it’s gluten free. I add walnuts. Huge crowd pleaser perfect amount of sweetness I cannot say enough. Easy to make I give it 10 stars

This truly is the best recipe, and I use oil instead of butter, however going dairy free means the buttermilk in the mix is now a no-go. Can this baking mix be substituted for your new dairy free pancake mix? Was hoping for more recipes on your website with the new product. Thanks!!

    • Effy I use another gf flour and add my own leavening plus guar gum instead of xanthan gum which bothers my gut a lot.

    • Effy We use full fat coconut milk (Native Forest: Simple has no gums), or unsweetened coconut/almond creamer if you can tolerate the gums.
